A ride out in the country side side drop off to some pub have some sunday lunch then back to your place or mine to drink a bottle of wine in front of some good film, or listen to music.

A day ride to the mountains and/or desert. It wouldn't really be a 'date', just two friends enjoying the sights and outdoors. If camping was involved, yes, one 4-person tent, two air mattresses and sleeping bags...and like above, no surprises! Maybe something more simple...a double inflateable kayak paddling down to watch a Humphrey's concert from the water.
I'm now looking for a more extended ride 2-3 months this summer. San Diego to Colo to Neb to Minn to Montana, Idaho and back.
