O.K. friends!
Can't remember who it was, but someone threw out the idea of a recipie thread - So, since it seems there may be some interest I thought I'd start it- Not with a recipie, but with a request for one....I am looking for a decent Banana bread recipie. The one I have makes this loaf like a brick and I have heard and even enjoyed banana bread that was light - Does anyone know what I am talkin' about?
My bananas are soon to be bread material !!!!

Great recipes Weenie I copied a
few down for the holidays thanks
I love trying new stuff..they'll
be great for holiday company...
here a couple to add to the pumpkin
collection

Pumpkin Cookies

1 C shortening
1 C sugar
1 egg
1 C canned or fresh pumpkin
1 tsp vanilla

~~~~~~~~~~~~~~

2 C sifted all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground allspice

~~~~~~~~~~~~

2 C chocolate chips
OR
1 C raisins
1/2 C chopped nuts
OR
just plain with frosting

Thoroughly cream shortening and sugar
together, Add egg, pumpkin, and vanilla: beat well, Sift together flour baking powder, baking soda salt cinn nutmeg and allspice. Add to creamed mixture: blend well. stir in the nut rainsins or chips whatever you chose Drop by rounded tsps 2 inches apart on greased cookie sheet Bake at
350 degrees for 12 to 15 minutes. remove from cookie sheet and frost with butter frosting immediately if desired

Butter Frosting:
3 tlbs butter or margarine: gradually add 1 1/4 C sufted confectioners' sugar blending well Beat in 1 tlb light cream and 1/2 tsp vanilla gradually blend in another 1 1/4 C confectioners' sugar add enough light cream to sugar mixture to make a spreading consistency about 1 tlb.

I usually just make them with the chocolate chips and there a hit.

Makes about 3 1/2 dozen

Golden pumpkin muffins

In mixing bowl thoroughly combine 2 C packaged biscuit mix, 1/2 C sugar and 1 1/2 tsp pumpkin pie spice. In a small bowl combine 2/4 C milk 1/2 C canned pumpkin 1 slightly beaten egg and 2 tlbs salad oil. stir into dry ingredients till blended Fill greased muffin cups 2/3 full and bake at 400 degrees about 20 minutes makes 1 dozen muffins

I love baking cookies for the holidays and would love if you all would share some cookie receipes.

Mississippi Mud Cake

1 cup butter, softened
2 cups sugar
4 eggs
2 tsp vanilla
1 1/2 cups plain flour
1/3 cup dry cocoa
1 cup chopped pecans
minature marshmellows

cream butter, sugar, add eggs and vanilla. Add flour and cocoa. Bake in a 13 x 9 9 inch pan for 30 minutes at 325

when cake is done, put a layer of minature marshmellows on top of the cake and let melt in

Icing

2 sticks of butter
1/4 cup of milk
1 tsp vanilla
1/3 cup of cocoa
1 box of confectioners sugar
1 cup pecans

use a double boiler for this, in the top pot melt butter, add milk, vanilla then sugar and cocoa. Beat over low heat with mixer, stir in nuts and spread over the marshmellows


this is great but ya need a glass of milk

this is the best meatloaf I have ever made

Weenie's Meatloaf

1 1/2 lbs ground beef
1/3 cup plain bread crumbs
1/3 cup finely chopped celery
1/3 cup finely chopped onion
1 egg
1 tblsp tomato paste
1/3 cup catsup
3 to 4 tblsp evaporated milk
1/2 tsp salt and black pepper

Of course, combine all ingredients, and shape it any way ya want! Bake for one hour at 350.

Now, while it is cooking, baste it with this.

2/3 cup of catsup
1/3 cup of packed brown sugar

I start with a bit when I first put into oven and add until it is all on there

Lemon Chess Pie

2 cup sugar
1 tblsp. all purpose flour
1 tblsp. corn meal
4 eggs, beaten
1/4 cup lemon juice, freshly squeezed
1/4 cup grated lemon zest (about 4 lemons)
1/4 cup milk
1/4 cup melted butter
1 9 in. unbaked pie crust

preheat oven to 350. Mix ingredients well and pour into pie crust, bake for about 40 to 45 minutes, cool to room temperature before cutting.

this is the easiest recipe for when you want something sweet that goes with a meal, I have had it at the Thanksgiving Dinner before.


Pineapple Souffle

8 slices of white bread, crust trimmed
1 stick of butter, melted
4 eggs
1 cup of sugar
15 oz can crushed pineapple, drained

Mix eggs, sugar and melted butter, add pineapple and stir in bread.

Pour into a casserole dish and bake for one hour at 350.

well sis, you get a big bottle of Kahlua, put what you need in the recipe and drink the rest!!! You just knows I love my Kahlua!!!

Another favorite of family & friends

INDONESIAN CHICKEN

1 lb. chicken pieces
Cooking spray
Garlic Powder
Salt
Crushed Red Pepper
Turmeric Powder
1/2 tsp. Coriander Powder
1 tsp. Bead Molasses
1 T. Soy Sauce
1 onion, chopped
Rice
1 c. water

Wash chicken pieces, take skin off. Fry chicken in pan with cooking spray. Salt & garlic powder both sides first. Sprinkle crushed red pepper & turmeric powder on one side. When browned, turn over & do the same on the other side. Add onion, coriander powder, bead molasses, soy sauce & water. Simmer 1/2 hour. Turn over & simmer until done. Make sure the sauce doesn't dry up. Add more water if needed. Prepare rice. Spoon sauce over rice.

These are yummy!

APPLE BARS

2 c. flour
1/2 tsp. baking powder
1 c. butter
1/2 c. sugar
1/2 tsp. salt
2 beaten egg yolks
1/3 c. sugar
4 sliced apples
1/8 c. flour
1 tsp. cinnamon

Mix 2 cups flour, baking powder, butter, sugar, salt & egg yolks together. Pat half the mixture into a 9x13-inch pan. Arrange a layer of sliced apples evenly over the crust. Mix together & sprinkle over apples the sugar, flour & cinnamon. Crumble the second half of the crust mixture over the apples. Bake at 350* for 40-45 minutes. While warm, drizzle with powdered sugar glaze.

Here's my famous Spinach Squares, which I'll be bringing this weekend for our WI Christmas get together.

SPINACH SQUARES

4 T. butter, melted
3 eggs
1 c. flour
1 c. milk
1 tsp. salt
1 tsp. baking powder
1/2 onion, finely chopped
2-8 oz. pkg. finely shredded Monterey Jack cheese or Co-Jack (Colby & Monterey Jack)
2-10 oz. pkgs. frozen spinach, thawed & squeezed
Mix butter, eggs, flour, milk, salt, baking powder, onion, cheese, and spinach in this order. Bake in a 9x13-inch pan at 350* for 35-40 min. Cut into small squares. Tastes yummy hot or cold.
